Method
- In a medium bowl, mash the banana.
- Add the oats, and honey to the mashed banana and mix until well combined.
- Add the mixture to a muffin pan and divide over 6 cups. Push the mixture to the edges and bottom, so that you are creating a cup.
- Freeze the muffin tray for 30 minutes.
- Preheat the oven to 350 degrees and bake the cups for 30 minutes. Then remove from the oven and let cool off for 10 minutes.
- Add the yogurt and berries to each cup and serve immediately.
Notes
- For the crispiest, bakery-style granola cups, pack the oat mixture firmly into the muffin molds press it up the sides with the back of a spoon to create tight, even walls. After baking, let the cups cool completely in the tray; this helps them harden and prevents crumbling when you add the yogurt.
- You can bake the oat cups ahead of time and store them in the fridge (up to 4 days) or freezer. Just fill with yogurt and fruit when you're ready to enjoy!
