Ingredients
  

  • 3 cups puffed rice cereal (unsweetened or lightly sweetened)
  • 1 cup natural peanut butter or almond butter (no added sugar)
  • 1/2 cup honey or maple syrup
  • 1 scoop protein powder (vanilla)
  • 1 tbsp vanilla extract
  • Pinch of sea salt

Method
 

  1. Melt peanut butter and honey together in a saucepan over low heat, stirring until smooth.
  2. Remove from heat and add vanilla. Mix in the protein powder and salt until fully incorporated (it’ll get thick, that’s okay).
  3. Fold in the crispy rice cereal until it’s evenly coated.
  4. Press the mixture into a parchment-lined 8x8" baking pan. Use the back of a spoon or your hands to press it down firmly.
  5. Chill in the fridge for at least 30 minutes before slicing into bars.

Notes

    • Nut-free? Use sunflower seed butter and nut-free cereal.
    • Extra crunch? Stir in sunflower seeds, cacao nibs, or chopped almonds.
    • Want it sweeter? Add a tablespoon of dark chocolate chips or drizzle melted chocolate on top before chilling.
