Ingredients
  

  • 1 3/4 cups gluten-free flour
  • 2 cup cottage cheese
  • 1 teaspoon baking powder
  • Pinch of salt
  • 1 tablespoon sesame seeds (optional)
  • 1 egg (for egg wash)
  • Coarse salt for sprinkling (optional)

Method
 

  1. Mix gluten-free flour, baking powder, and salt in a large bowl.
  2. Blend the cottage cheese until smooth.
  3. Add whipped cottage cheese to dry ingredients and mix into a dough.
  4. Knead gently for 2–3 minutes until smooth.
  5. Cover and rest the dough for 30 minutes.
  6. Preheat oven to 375°F and line a baking sheet with parchment.
  7. Divide dough into 6–8 pieces and roll each into an 18–20 inch rope.
  8. Shape each rope into a pretzel (U-shape → cross ends twice → press down). Place pretzels on the baking sheet.
  9. Brush with beaten egg wash. Sprinkle sesame seeds and coarse salt if desired.
  10. Bake for 25 minutes until golden. Cool slightly and serve.

Notes

  • Brush the pretzels with egg wash twice for a richer golden crust without drying them out.
  • For the best texture, don’t skip the 30-minute rest—it allows the gluten-free flour to hydrate fully, making the dough smoother, easier to shape, and giving the pretzels a softer, chewier bite
