Protein Brownie in a Mug

Ingredients
  

  • 2 tbsp all-purpose flour
  • 2 tbsp pure cane sugar
  • 1 tbsp cocoa powder
  • 1 tbsp vegan mini chocolate chips
  • 1 tbsp vegan milk of your choice (I used soy milk)
  • 1 tbsp vegetable oil
  • ½ tsp pure vanilla extract
  • ¼ tsp baking powder
  • ¼ tsp salt

Method
 

  1. In a 8 to 12 oz mug, add the dry ingredients; all-purpose flour, cocoa powder, baking powder, salt and sugar.
  2. Mix until well combined. Then add the wet ingredients, milk, oil, vanilla extract. Mix until well combined.
  3. Add the chocolate chips on top. Put in the microwave for 1 minute and 45 seconds, or add a few more seconds, if it still has lots of wetness.
  4. Let it cool off for at least one minute.
  5. Garnish with a little confectioners sugar, optional.

Notes

  • Microwave wattages vary. Start with 1:45 and adjust in 10-second increments.
  • For a gluten-free version, substitute with a 1:1 gluten-free flour blend.
  • Use a mug that holds at least 8 oz to prevent overflow.
  • You can reduce sugar slightly if your protein powder is already sweetened.
