Method
- Preheat oven to 350°F (175°C) and line a tray with parchment.
- Spread oat flour on the tray and bake 5–7 minutes to toast. Cool completely.
- Mix coconut oil and sugars until combined.
- Add cocoa powder, oat milk, salt, and vanilla; stir well.
- Place bowl over simmering water and heat until smooth and sugar dissolves (or microwave in 15-second bursts up to 90 seconds).
- Add almond flour and toasted oat flour; mix into a thick batter.
- Cover and chill 30 minutes to firm.
- Scoop 2-teaspoon portions and roll into balls; place on a lined tray.
- Freeze at least 10 minutes.
- Melt chocolate with coconut oil using a double boiler or microwave in short bursts.
- (Optional) Temper chocolate for a shinier, more stable coating.
- Dip each truffle in melted chocolate and place back on parchment; add drizzle or salt if desired.
- Let set fully at room temp or freezer. Store in fridge 5 days or freezer 1 month.
