Salted Peanut Butter Fudge

Ingredients
  

  • 2 cups peanut butter
  • ½ cup coconut oil
  • ¼ cup sugar free maple syrup
  • sea salt

Equipment

  • Measuring cups
  • Medium Mixing Bowl
  • silicone spoon or whisk
  • Cookie scoop
  • silicone mini muffin pan
  • freezer-safe storage bag

Method
 

  1. Mix all of the ingredients together in a medium bowl.
  2. Use the cookie scoop to gather dough, then drop into a silicone mini muffin pan.
  3. Sprinkle with sea salt. Then transfer to the freezer for 30 minutes.
  4. Add to a freezer safe baggie and keep frozen, then remove individual pieces as you wish.

Notes

  • Make sure your peanut butter is really well stirred before you start. The natural kind separates, and if you skip this step the texture ends up a little off.
  • If you don’t have silicone molds, you can just pour everything into a small pan, freeze it, and cut it into squares. Works just fine too.
  • Also, taste it before freezing. If you want it sweeter, add a little more syrup or even a drop of vanilla!
