No Bake Protein Brownie Bites Recipe
So this no bake protein brownie bites recipe started on one of those afternoons where I wanted something chocolate, but I also knew if I grabbed something random I’d be hungry again in like 20 minutes.
I didn’t feel like baking, I didn’t feel like making a whole thing out of it, and I definitely didn’t want another snack that tastes “healthy” but doesn’t actually satisfy anything.
I had almond flour, some chocolate protein powder, and a bag of chocolate chips in the pantry, so I just started mixing. No real plan, just hoping it would come together into something edible.
And somehow these ended up being one of those protein snacks we make on repeat each week in my home!
Even my kids love them, so I know you will too! Here is my simple healthy brownie bites recipe for you to enjoy too.

Why these are actually worth making
What I like about these is that every ingredient is actually pulling its weight a little:
- Almond flour gives you healthy fats and makes these more filling, so you’re not immediately looking for something else after
- Chocolate protein powder is what makes these actually hold you over instead of just tasting good for five minutes
- Maple syrup adds just enough sweetness without overdoing it, and helps everything come together
- Dark chocolate on top makes them feel like a real treat, not just another “protein snack”
So you end up with something that’s balanced enough to keep your energy steady, but still feels like you’re eating something you actually wanted in the first place! That’s my type of snack 🙂

Easy No Bake Protein Brownie Bites Recipe
This makes about 20 bites if you’re using a mini muffin pan:
Ingredients
Base
- 1 cup almond flour
- 1 cup chocolate protein powder
- ¼ cup maple syrup
- About ¼ cup almond milk (as needed)
Topping
- 1 cup dark chocolate chips
- ¼ teaspoon flaky sea salt (optional, but I love it on top!)

How To Make Protein Brownie Bites
In a mixing bowl, combine the almond flour, chocolate protein powder, and maple syrup. Mix until everything is well combined.

Slowly add almond milk, about a tablespoon at a time, mixing in between. You’re looking for a thick, soft, moldable texture.

Press the mixture into a silicone mini muffin mold, filling each about ¾ full.

Melt the dark chocolate chips using a microwave (short intervals, stir in between) or double boiler.

Spoon the melted chocolate over each bite and spread gently.

Sprinkle a little flaky sea salt on top.

Place in the fridge for about 20 minutes, or until the chocolate is set.

Notes
- Add the almond milk slowly. It goes from dry to perfect to too soft pretty fast!
- If your dough feels sticky, let it sit for a minute. It thickens as it absorbs moisture
- Silicone molds make your life way easier here!
- I sometimes will add collagen to my melted chocolate too!

Easy Swaps
- Use monk fruit syrup instead of maple syrup if you want a lower sugar option
- Swap in sugar-free chocolate chips if that’s your thing, that’s what I do!
- Add a little vanilla extract if you want a more dessert-y flavor
- Sprinkle crushed nuts on top for a little crunch, it’s SO good!
They’re naturally great gluten free snacks, which is always a bonus if you need that 🙂

Estimated nutrition (per bite)
This is a rough estimate, but it gives you a good idea:
Per 1 bite (assuming 20 total):
- Calories: ~120
- Protein: ~6–7g
- Fat: ~7g
- Carbs: ~9–10g
- Sugar: ~5–6g
When these come in handy
These are one of those healthy high protein snacks that actually fit into real life:
- Mid-afternoon when you’re dragging
- After dinner when you want something sweet
- Quick grab-and-go option during busy days
- Even as a little pre-workout bite
They also double as protein treats that don’t feel overly “healthy,” if you know what I mean!
