No Bake Protein Brownie Bites Recipe

So this no bake protein brownie bites recipe started on one of those afternoons where I wanted something chocolate, but I also knew if I grabbed something random I’d be hungry again in like 20 minutes.

I didn’t feel like baking, I didn’t feel like making a whole thing out of it, and I definitely didn’t want another snack that tastes “healthy” but doesn’t actually satisfy anything.

I had almond flour, some chocolate protein powder, and a bag of chocolate chips in the pantry, so I just started mixing. No real plan, just hoping it would come together into something edible.

And somehow these ended up being one of those protein snacks we make on repeat each week in my home!

Easy No Bake Protein Brownie Bites Recipe

This makes about 20 bites if you’re using a mini muffin pan:

Ingredients

Base

  • 1 cup almond flour
  • 1 cup chocolate protein powder
  • ¼ cup maple syrup
  • About ¼ cup almond milk (as needed)

Topping

  • 1 cup dark chocolate chips
  • ¼ teaspoon flaky sea salt (optional, but I love it on top!)

How To Make Protein Brownie Bites

In a mixing bowl, combine the almond flour, chocolate protein powder, and maple syrup. Mix until everything is well combined.

Slowly add almond milk, about a tablespoon at a time, mixing in between. You’re looking for a thick, soft, moldable texture.

Press the mixture into a silicone mini muffin mold, filling each about ¾ full.

Melt the dark chocolate chips using a microwave (short intervals, stir in between) or double boiler.

Spoon the melted chocolate over each bite and spread gently.

Sprinkle a little flaky sea salt on top.

Place in the fridge for about 20 minutes, or until the chocolate is set.

Notes

  • Add the almond milk slowly. It goes from dry to perfect to too soft pretty fast!
  • If your dough feels sticky, let it sit for a minute. It thickens as it absorbs moisture
  • Silicone molds make your life way easier here!
  • I sometimes will add collagen to my melted chocolate too!

Easy Swaps

  • Use monk fruit syrup instead of maple syrup if you want a lower sugar option
  • Swap in sugar-free chocolate chips if that’s your thing, that’s what I do!
  • Add a little vanilla extract if you want a more dessert-y flavor
  • Sprinkle crushed nuts on top for a little crunch, it’s SO good!

They’re naturally great gluten free snacks, which is always a bonus if you need that 🙂

Notes

  • Press the base firmly into the mold—this prevents the bites from crumbling and gives that dense, brownie-like texture.
