Ingredients

For the bites:

  • ½ cup creamy almond butter (120g)
  • ¼ cup pure maple syrup (60ml)
  • ¼ cup Medjool dates, pitted (60g)
  • 1 tsp vanilla extract (5ml)
  • ¼ tsp salt (1g)
  • 1 cup freeze-dried strawberries, crushed (20g)

For the topping (optional):

  • ¼ cup white chocolate chips (45g)
  • 1 tsp coconut oil (5ml)
  • Extra crushed freeze-dried strawberries for garnish

How To Make Strawberry Shortcake Energy Bites

In a food processor, pulse oats and cashews until the texture is fine and flour-like.

Toss in the dates and pulse again until they’re well incorporated and broken down.

Add almond butter, maple syrup, vanilla, and salt. Blend until a sticky dough forms. Scrape the sides as needed.
